FlipFlopz Executive Chef John Lomonaco
Everywhere you go in N. Wildwood and Wildwood during the Irish Fall Festival you'll see signs that say, "Welcome Irish." At FlipFlopz, a new restaurant on Old New Jersey Avenue in N. Wildwood, executive chef John Lomonaco hung out more than a sign to lure in the thousands of Irish and Irish-Americans who flocked to the shore for the annual weekend festivities. He created an Irish menu and let the scents waft out to attract customers to this restaurant that's so new, construction isn't even quite finished.
We tried John's ham and cabbage with mustard sauce and immediately tracked him and down and asked for the recipe, which he graciously shared .
John Lomonaco's Ham and Cabbage
Cook ham and cabbage with a little water and salt and pepper , covered with tin foil, in 400 degree F oven for one hour and 15 minutes. Cooking the two together allows the flavors to meld.
Mustard Sauce
(This recipe serves 25, but is easily cut down by half or a quarter if you're not having the entire family over.)
Mix together:
1/2 cup stone ground mustard
1/2 quart heavy cream
1 quart honey
1/2 cup sugar
Serve warm over top of cooked ham and cabbage.
