Irish Sausage with Peppers & Onions

- 1 lb Irish sausages
- 3 12” X 12” sheets of foil triple layered (Create a “box”)
- 1 large red bell pepper, julienne
- 1 large white onion, julienne
- 6 oz Smithwicks
- Salt and pepper
Place foil on grill and let it get hot. Add sausages, peppers and onions; cook for 6 – 8 minutes or until they begin to get color.
ADD Smithwick’s and close grill. Cook for 20 minutes or until sausages are all cooked and beer has reduced to dry. Remove and serve family style.
