Lobster Mac and Cheese

It’s comfort food and an aphrodisiac all rolled into one. Best of all, it’s easy and fairly quick to make. You may already have most of the ingredients in your kitchen. All you need is the lobster. When I made this dish at The Shanachie (with fresh, not processed, ingredients), hundreds of dishes were flying out of the kitchen.

Serves 4

  • 1 package (7-1/4 oz.) Kraft Macaroni and Cheese Dinner
  • 1/4 cup milk
  • 1 large tomato, diced
  • 1 Tbsp Grey Poupon Dijon mustard
  • 2 Tbsp butter, melted
  • 1/4 cup Ritz Crackers, crushed
  • 1 Lobster, steamed and shelled (reserve shells & meat)

1. Preheat oven to 375°F. Add macaroni to large saucepan of boiling water; cook 6 minutes or until tender. Drain.

2. Steam lobster in water and reserve for macaroni.  Heat milk and lobster shells, strain, and reserve Milk. Stir milk and lobster meat with cheese sauce. Add to macaroni.

3. Pour into greased 8-inch square baking dish. Mix tomatoes and Grey Poupon. Top macaroni mixture with tomato. Drizzle butter over cracker crumbs; toss with fork. Sprinkle over tomatoes.

4. Bake 15 minutes or until heated through and crumbs are golden.
